The Chinese food contaminant of choice seems to be melamine - e.g.,pet food, milk. Melamine contains nitrogen which fools the protein level tests (which measure nitrogen).
Okay, notice how the Chinese first reaction is to cover up and stonewall a la Karl Rove? The reason for this is the character of authoritarian societies- like China, Russia, Nazi Germany, Italian fascism, and Bush's neocon fantasy world. http://en.wikipedia.org/wiki/Authoritarianism

dguzman: Those are the rules, but there is also that rule about getting caught: don't...unless you don't mind being taken out back, being shot in the head and having your organs harvested. Just saying.
